Ingredients
- Pork shoulder loin 400g
- Salt 20g
- Black pepper 20g
- Soy sauce 30cc
- Sake 30cc
- Mirin 30cc
Step 1
Soak pork shoulder loin with salt and black pepper, wrap and let it sit in the refrigerator overnight.
Step 2
Bring soy sauce, sake, and mirin to boiling point in order to remove alcohol.
Step 3
Put the meat sit overnight in a zipper storage bag with the sauce made at step 2. and made it vacuum.
※If put inside water the air from the bag can be removed faster and better.
Step 4
Set up a low temperature for cooking
- Set temperature: 63 degrees
- Time: 4 hours
When the setting is complete, cook the bag of step 3 in a pan with water.
Step 5
After a while, put it immediately in cold water to remove the heat.
*Doing this, you can keep the meat inside red.
Step 6
